Herb and Parmesan Crusted Rack of Lamb

INGREDIENTS
- 2 x four-point lamb racks, approx. 300g each, trenched
- ¼ tsp sea salt
- 2 tbsp Dijon mustard
- Cooking spray
Herb & Parmesan Crust
- ½ cup panko breadcrumbs
- 1/3 cup grated parmesan
- 1 clove of garlic, minced
- 1 tbsp roughly chopped parsley
- 1 tbsp olive oil
- ¼ tsp sea salt
METHOD
- Remove the lamb from the fridge 30 minutes before cooking to allow for even cooking.
- Combine all the ingredients for the herb and parmesan crust in a bowl.
- Sprinkle the salt all over the surface of the lamb cutlets.
- Brush the fatty surface and sides of each lamb rack with the Dijon mustard.
- Press the crumb firmly into the mustard, then place into the air fryer drawer on top of the frying tray, crumb side up.
- Spray the surface of the lamb with cooking oil.
- Select the (MEAT) function, then adjust the temperature to 180°C and adjust the time to 25 minutes. Press (START/STOP) to start the function.
- Once function is complete and lamb is cooked, remove drawer from the air fryer and leave the lamb to rest in a warm place for 1O minutes before carving. Enjoy!
