Perfectly Soft Boiled Eggs

INGREDIENTS
- 600g skinless chicken thighs, diced into 2cm cubes
- 2 tbsp rice vinegar, separated
- 2 tbsp soy sauce, separated
- 1 tsp minced fresh ginger
- 1 garlic clove minced
- 1 cup cornflour
- Olive oil spray
- 1 tbsp brown sugar
- 1 tbsp sesame seeds
- 1 tsp sesame oil
- Freshly steamed rice, to serve
- Spring onion, thinly sliced, to serve
METHOD
1. Place the chicken in a large bowl along with 1 tbsp of vinegar, 1 tbsp of soy sauce, ginger and garlic. Mix well to combine, then set aside for 30 minutes to marinate.
2. Meanwhile, preheat the air fryer to 200°C.
3. Place the cornflour into a large bowl and add ½ of the marinated chicken, tossing well to coat.
4. Arrange the chicken evenly around the base of the air fryer and spray generously with olive oil spray. Select the (CHICKEN) function and adjust the cooking time to 10 minutes, shaking the basket at the halfway mark. Set the chicken aside then repeat with the remaining chicken.
5. Meanwhile, make the sauce by combining the remaining vinegar, soy, brown sugar, sesame seeds and sesame oil in a large bowl and mix well to combine. Add the cooked chicken and toss well to coat.
6. Return the coated chicken to the air fryer and cook, using the same setting, for a further 5 minutes, or until golden and caramelised. Serve the crispy sesame chicken over freshly steamed rice and garnished with spring onion. Enjoy!
