Serves: 4
Prep: 15 minutes (+ 30 min marinating)
Cook: 20 minutes
INGREDIENTS
- 1kg pork belly, rind removed
- 2 tbsp brown sugar
- 2 tbsp oyster sauce
- 2 tbsp dark soy sauce
- 1 tbsp sesame oil
- 1 tbsp Chinese rice wine
- 2 tsp garlic powder
- 1 tsp five spice powder
- Freshly steamed rice, to serve
- Spring onion, thinly sliced, to serve
METHOD
1. Dice the pork belly into 3cm cubes and set aside.
2. Place all remaining ingredients in a large bowl and mix well to combine. Remove 2 tbsp of marinade and set aside for basting. Add the pork belly to the bowl, toss well to coat, then set aside for 30 minutes to marinate.
3. Meanwhile, preheat the air fryer to 180°C. Arrange the pork belly evenly around the base of the air fryer and select the MEAT function.
4. Adjust the cooking time to 20 minutes, then baste the pork belly bites at 5-minute intervals using the reserved marinade. Serve the sweet, caramelised pork bites over freshly steamed rice and garnish with spring onion.
