Grilled Vegetable and Black Rice Salad
You'll love the fresh flavours of this veggie packed Grilled Vegetable and Black Rice Salad!
Preparation time: 30 minutes
INGREDIENTS
- 3 small zucchini
- 1 red capsicum
- 1 yellow capsicum
- 1 green capsicum
- 1 red onion
- ½ cup black rice
- 2 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- salt and pepper
- 1 small handful parsley, finely chopped
- 1 cup rocket leaves
- optional extras: flaked almonds, crumbled feta cheese
METHOD
- Prepare all of the vegetables; cut the zucchini in half lengthways, slice the capsicum, cut the onion into quarters. Brush all of the vegetables with vegetable oil then grill on the barbeque, or a griddle pan.
- Cook the rice, as per packet instructions.
- Tumble the grilled vegetables together with cooked rice, break apart the onion petals. Add rocket leaves and chopped parsley. Season with salt and pepper, drizzle with a touch more olive oil and red wine vinegar.
- Serve warm or cold.
