Chocolate Meringues
Light, crisp chocolate meringues with a chewy centre, flecked with dark chocolate and gently air-fried until perfectly set, featuring the Baccarat The Healthy Fry Compact Air Fryer 5.7L.

INGREDIENTS
- 2 large egg whites
- 110g (½ cup) caster sugar
- Pinch of cream of tartar
- Pinch of sea salt
- 25g good-quality dark chocolate, melted
- and cooled
- Lightly whipped cream, to serve
METHOD
1. Preheat the air fryer to 120°C.
2. Place the egg whites, sugar, cream of tartar and salt in the bowl of a stand mixer fitted with a whisk attachment. Whisk on high for 20 minutes or until the mixture is thick and glossy and the sugar is fully dissolved.
3. Pour the chocolate over the meringue mixture then gently fold the mixture twice to incorporate.
4. Use two large spoons to scoop and shape 4 meringues into the base of the air fryer basket. Select the CAKE function and adjust the temperature to 120°C. Cook for 1 hour or until dry to the touch. Turn off the air fryer then leave the meringues for 1 hour or until cooled completely. Serve with a dollop of cream and enjoy!
